Exciting transformation brings new wine bar to Scartho

A former Scartho restaurant is currently undergoing an exciting transformation to turn it into a wine bar and steak and pie venue.

Simon Plumpton successfully gained a new licence for the former Lids bar on Louth Road, Scartho.

Named “Swagger”,  the new wine bar will have an exclusive franchise of Pie Minister, which supplies Parliament and Waitrose when it opens next month.

He said his son came up with the name “Swagger” to give the village a lift following the covid pandemic so that people can arrive at the venue with a spring in their step.

The old restaurant and signage are currently being removed as the new bar prepares to being delicious food and a great atmosphere to the village.

“It is being completely ripped out because it is the most disgusting place I have ever worked in. New signs will be going up and it will be an up-market place for Scartho. I want to distance myself from the past. It will be making a statement,” said Simon.

He said: “Swagger will have a whole new kitchen and we are the only ones with the franchise from The Pie Minister of London. It would be nice to get back to way the old Beeches was run and serve T-bone steaks and be upmarket, rather than just burgers.”

The businessman added: “I was pleased to have the opportunity to open up in Scartho. There are so many new housing developments in the area, that you have to book a table well in advance. It is going to take a month to get it all sorted. It has taken a month just to get the licence back from noon until 11pm.

“I will be taking on four new young staff to give them an opportunity. There will also be two bar supervisors and a bar manager. I don’t want to have people working 50 to 60 hours a week. There will be split shifts and will hope to be part of a community hub so we can work alongside Scartho’s other bars and venues.

“We are not going to do pizzas so we are not in competition with Ben (Ben Pavone of Stone Oven Italian Kitchen) and will work with other venues.”
